Today, we wanted to invite you into our kitchen as we prepare a McInturff & Co. favorite, our refreshing Summer Kale Salad, featuring local ingredients that capture the essence of Spokane. This salad is perfect for those warm summer days when you crave something light and nourishing. So grab a bowl, and let’s dive into this mouthwatering creation that celebrates the bounty of the season while embracing the flavors of our community.

Refreshing Summer Kale Salad

Ingredients

  • Kale
  • Nectarine
  • Prosciutto
  • Parmesan
  • Toasted hazelnuts
  • Edible flowers for garnish

Head to any of the Farmer’s markets around the city to pick up local produce!

Dressing Ingredients

  • 1 tablespoon whole-grain mustard
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon honey

Instructions

Step 1: Prepare the Dressing

  1. In a small bowl, combine the whole-grain mustard, olive oil, salt, pepper, balsamic vinegar, and honey.
  2. Whisk the ingredients together until well blended. Set aside for later use.

Step 2: Prepare the Salad

  1. Begin by washing and drying the kale leaves thoroughly.
  2. Remove the tough stems from the kale and chop the leaves into bite-sized pieces.
  3. Place the chopped kale in a large mixing bowl.
  4. Pour a generous amount of the prepared dressing over the kale.
  5. Gently massage the dressing into the kale leaves, ensuring they are well coated.
  6. Continue massaging the kale for a few minutes until it becomes tender and slightly wilted.

Step 3: Assemble the Salad

  1. Slice the nectarine into bite-sized pieces and set aside.
  2. Next, toast the hazelnuts in a dry skillet over medium heat until fragrant and lightly browned.
  3. Remove the toasted hazelnuts from the heat and chop them into rough pieces.
  4. Grate the parmesan cheese and set aside, reserving some shavings for garnish.
  5. Add the sliced nectarine, chopped toasted hazelnuts, and grated parmesan to the bowl of dressed kale.
  6. Lastly, toss all the ingredients together until well combined.

Step 4: Serve and Enjoy

  1. Transfer the salad to a serving dish or individual plates.
  2. Garnish with edible flowers and the reserved parmesan shavings for an elegant touch.
  3. Serve immediately and enjoy the crispness and flavors of this delightful summer salad.
